Pozole Roja (Pork and Vegan Option)-GF/VGO/V

A tradional soup that is popular in Mexico and New Mexico, it is pork that is cooked in a chicken broth infused with ancho and guajillo chilies and onions, and hominy.  The vegan version will be made with vegetable broth, and Jackfruit instead of pork. (Freezable) This is the soup only.  No accompaniments provided this week.
