Butternut Squash, Potato, Chickpea and Tomato Stew with Savory Lemon Yogurt Sauce (GF/V/VG/Freezable)

Butternut squash, potatoes, onions, chickpeas, and tomatoes, simmered in a vegetable broth with cinnamon, cumin, and coriander. Green olives and cilantro added at the end.  Savory lemon yogurt served on the side. Vegan version served with a savory lemon coconut yogurt.
