Cretan Pickled Beets and Skordalia (V/VG)

Beets that are pickled in all spice, cinnamon, thyme and red wine vinegar served on a bed of Skordalia. Skordalia is a starchy puree of potatoes, French bread, garlic, slivered almonds, red wine vinegar, and olive oil.  Drizzle of olive oil  and topped with dill.  Serves 2.
