Fasolatha, Greek White Bean soup (V/VG/GF/Freezable)

A classic and traditional Greek white bean soup with cannalini beans, carrots, celery, onion, leeks, garlic and lemon juice infused light broth.  The dish is vegan and gluten-free.  Thickened with a little GF flour to add body to the broth.
