Nicoise Salad (VO/VGO/GF)

Traditional French salad originated in Nice. Mixed leafy greens topped with boiled and sliced creamer potatoes, hericot verts, Cherry tomatoes, hard boiled egg, kalamata olives, and red onions. Traditional salad also gets tuna on top. The Vegetarian version will sub the tuna with white beans. The vegan version is the Vegetarian version with no egg.  Comes with a lemon vinaigrette on the side.  Serves 2.
