Poached Dried Apricots with Ricotta and Pistachios (V/GF)

Turkish Dried Apricots poached in a lemon simple syrup to plump them up. They are sliced and stuffed with whipped homemade ricotta and dusted with chopped pistachios.  A lovely light after dinner dessert that is the perfect bite of sweet, tart, creamy, and finished with a  salty crunch.  6 per order.
