Roasted Eggplant Parmesan (GF/Vegetarian/Vegan option)
This is a cleaner version of eggplant parmesan than you get in most restaurants. I don't bread and fry the eggplant. Just roasted slices of eggplant with marinara and parmesan baked to perfection and stacked. Portion includes 2 stacks of 3-4  slices of eggplant per person, Pairs well with pasta and sauce, salad, or make it into a sandwich. (Serves 2)
Vegan option available with vegan parmesan.
